Nikomi Udon

Ingredients Nikomi Udon :
300 g udon (Japanese noodles)
250 grams of chicken meat, cut into squares
1 teaspoon rice wine
1 1/2 liters of dashi
2 tablespoons mirin
6 tablespoons Kikkoman soy sauce
Hioko 4 pieces mushrooms, soaked hot water, drained
1 leek, cut in oblique
75 grams of spinach, pour boiling hot water
150 grams of carrots, flower shapes, cut into thin
4 eggs
topping:
1 leek, thinly sliced

How to make Nikomi Udon

Boil udon until tender, drain, then flush with cold water and set aside.

Combine the dashi, mirin, and soy sauce kikoman, stir, and cook until boiling, then enter the udon, chicken, mushrooms hioko, and scallions, cover briefly.

Enter the spinach, carrots, bring to a boil, then break the eggs and pour into it, cook until done, remove from heat, sprinkle top with chopped scallions.
